Elle a ainsi pu doubler sa surface et r\u00e9organiser l\u2019atelier, d\u00e9sormais ouvert au public. Elle promet \u00e0 ses visiteurs une \u00ab\u00a0<i>exp\u00e9rience immersive au plus pr\u00e8s du geste de nos biscuitiers, de fa\u00e7on \u00e0 comprendre les coulisses de la fabrication<\/i><i>\u00a0<\/i>\u00bb, avec l\u2019atelier de production ouvert sur la boutique, gr\u00e2ce \u00e0 ses grandes vitres transparentes.<\/p>\n<p>L\u2019ancienne forge avait \u00e9t\u00e9 transform\u00e9e en biscuiterie en 2014. \u00ab\u00a0<i>On a pu d\u00e9velopper ce savoir-faire de biscuitier qui valorise de belles fili\u00e8res agricoles locales, comme le dernier moulin familial \u00e0 Malijai, dont toutes nos farines sont issues<\/i><i>\u00a0<\/i>\u00bb, explique Laure Pierrisnard, directrice g\u00e9n\u00e9rale en charge des manufactures du groupe Territoire de Provence, auquel la biscuiterie appartient.<\/p>\n<p>32\u00a0tonnes de biscuits y sont fabriqu\u00e9es chaque ann\u00e9e. \u00ab\u00a0<i>Des recettes tr\u00e8s traditionnelles issues des savoir-faire proven\u00e7aux, comme les macarons de Haute-Provence, les navettes, avec une recette revisit\u00e9e par Pierre Herm\u00e9, les croquants, le gibassier<\/i><i>\u00a0<\/i>\u00bb, d\u00e9taille Laure Pierrisnard.<\/p>\n<p>\u00ab\u00a0<i>Il a fallu qu\u2019on se batte, avec le maire de Forcalquier, pour que l\u2019on poursuive la construction de ce b\u00e2timent, parce qu\u2019on \u00e9tait \u00e0 deux doigts d\u2019arr\u00eater le projet en 2020<\/i><i>\u00a0<\/i>\u00bb, s\u2019est rappel\u00e9 Michel Dalmasso, vice-pr\u00e9sident du conseil d\u00e9partemental, pr\u00e9sent \u00e0 l\u2019inauguration.<\/p>\n<p>Xavier Pannecoucke, sous-pr\u00e9fet de Digne-les-Bains, a salu\u00e9 \u00ab\u00a0<i>l\u2019entreprise embl\u00e9matique<\/i><i>\u00a0<\/i>\u00bb.
